Delicious Pumpkin Chocolate Chip Muffins

Healthy, satisfying, moist, pumpkin + chocolate muffins. Perfect for breakfast, a snack, or an after-dinner treat. Doug and I can’t get enough and we hope you enjoy it just as much as we do

Ingredients ~ 

• 2 eggs

• 1 cup coconut sugar 

• 1 cup canned pumpkin purée 

• 1/4 cup creamy almond butter 

• 2 tsp vanilla 

• 2 cups almond flour + 2 tbls coconut flour (u can just use all almond flour, too - the coconut flour just makes it thicker)

• 2 tsp baking powder 

• 1/2 tsp baking side 

• 1/4 tsp salt 

• 1 tsp pumpkin pie spice 

• 1 tsp cinnamon spice 

• 2/3 cup choco chips 

Steps ~ 

• preheat oven to 350

• combine eggs, coconut sugar, almond butter, pumpkin purée and vanilla 

• in a separate bowl, mix the flour, baking soda, baking powder, and spices 

• combine wet and dry ingredients 

• mix in choco chips 

• scoop in a greased muffin pan 

• bake for 20 min or until golden!
