Orzo with Roasted Veggies

This recipe is perfect for summer! I love to pair it with a protein like chicken, grilled shrimp, or sliced steak. This recipe is from one of my mom’s friends who gave it to me at my bridal shower. And it is adapted from Ina Garten. There is something about using a trusted handwritten recipe while cooking that makes the process that much more grounding. I hope you enjoy it!

Orzo With Roasted Veggies (and feta!)

Serves 6

Prep time: 20 min

Cook Time: 40 min

Ingredients

  • small eggplant

  • 1 red pepper, 1 yellow pepper

  • 1 red onion

  • 2 cloves garlic

  • olive oil

  • 1/3 lemon juice

  • 3/4 pound diced feta

  • basil cut into chiffonade

  • 1/2 pound orzo

Directions

  • preheat oven to 425

  • dice eggplant, peppers, and red onion to 1 inch. mince garlic

  • toss with olive oil, s+p, and roast for 40 minutes until browned (turning once with a spatula)

  • cook orzo, drain, and transfer to a bowl (add a little oil if it gets sticky)

  • add roasted veggies to pasta

  • making dressing - 1/3 cup lemon juice, 1/3 cup olive oil and s+p to taste

  • add dressing to orzo and veggies and let cool to room temperature

  • add feta and basil, check seasoning and serve
