Healthy GF Pumpkin Chocolate Chip Muffins!

Hello Everyone!

During the month of October, my craving for pumpkin-baked goods became hard to deny. In the past few fall seasons, I’ve explored some healthier baked treat options to enjoy daily. These muffins are my favorite (and Doug, too!). We love them because we can eat them for breakfast, and enjoy them as an afternoon snack or dessert. They are the perfect balance of satisfying and indulging. Below is the recipe. I can’t wait for you to try! (PS - they are dairy-free, too!)

Healthy GF Pumpkin Chocolate Chip Muffins

Ingredients

  • 2 eggs

  • 1 cup coconut sugar

  • 1 cup canned pumpkin puree

  • 1/4 cup creamy almond butter

  • 2 tsp vanilla

  • 2 cups almond flour + 2 tbs coconut flour (you can stick to only almond flour if needed)

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 2/3 cup dark chocolate chips

Steps

  • preheat over to 350 F

  • combine eggs, coconut sugar, almond butter, pumpkin puree and vanilla

  • in a separate bowl, mix the flours, baking soda, baking power and spices

  • combine wet and dry ingredients

  • mix in chocolate chips

  • scoop in a greased muffin pan

  • bake for 20-25 minutes or until golden
